They actually did remake The Shining. Stephen King said he didn't like Stanley Kubrick's version, so he executive produced a remake as a TV mini-series. As expected, it was not nearly as good as the original.

I'd say "Mac & Me". That movie was so horrible; it was a 1&1/2 hour long Coke and McDonald's commercial.

Definitely agree on Star Wars, although you could argue that Lucas already did remake it.

I'll also go with The Godfather. W/out Brando, Pacino, Caan, and Duval it was just be BAD.
