So first we bloom the cocoa. This is a trick I adapted from Indian cooking and it's the keep to deep chocolate flavor. Heat the cocoa in batches so that you get the broadest spectrum flavor profile. What? Remember, chocolate contains sugars. Sugars can be carmelized. Carmelization = flavor. We like this. By blooming in batches some of the chocolate is very carmelized, some a little, and then some not at all.


I put the pan on the back of the dishwasher door before spraying it down so that the mess will be in the dishwasher. It'll clean itself up when I run it next. Less cleaning for me, yay! The parchment paper is to help with removal after cooling.


Roasting the coconut and pecans for the German topping.

Oh, that's a good idea. I usually just hold it over the sink... but then I have to clean up the mess.
