I am considering inviting a gentleman I have been seeing over for dinner. I am a good cook so the choices aren't limited, but the last time I cooked for someone I wasn't married to or related to was a long time ago. Then fried chicken and apple pie were the choice, but I am not sure that with everyone being more "health obsessed that would be the best choice. So guys what would you see as a great first dinner with a lady. By the way the chicken worked, we were married for 32 years and he never complained about the food.

I asked a couple of guys here at work and they agreed that letting him BBQ would be a good idea. Fresh fish/ chiken / pork is a healthier choice than red meat . Their reasoning was because it is often awkward being in a lady's home for the first time and they don't like sitting there watching you work. They would want to help !

Pork tenderloin, cut in medallions. Onions nice and carmalized (olive oil), seer the medallions, deglaze the pan with a nice white, couple tablespoons butter, mushrooms (portabellas...mmmm) low heat simmer for 30min until wine is reduced down.
separate pan 3T butter , 3T sugar, dash of cinnimon. Heat, melt together, throw in some thin sliced apples (granny smith). Reduce down until apples nice and soft
some steamed , lightly buttered asparagus
either some mashed potatoes or red potatoes pre cooked (3 potatoes, microwave 3 minutes), sliced, fried with onions in butter till crisp brown skin. Salt, touch of paprika

in 4x8 pyrex dish
3T melted butter
couple nice halibut steaks

Separate bowl mix
3/4 C Mayo
3/4 C Sour cream
Squeeze lemon
mushrooms of choice
1/4C diced onions

Schlop sauce over fish
sprinkle cheddar cheese, chives on top
400deg 8min (will not be "done" when take out, but do not overcook)
take out, let stand 8 min

Serve with asparagus, light rice

Sounds good. My thought was a baked chicken, (grandma's way, with anise seed I will have to change the butter to olive oil though) wild rice and some baked fruit either apples or pears or both.

ever try grape seed oil? Even better for you, higher burn point.
