When you like someone you go out of your way for them. The ones who treat the people they like bad are the people you don't want to be around. Because they just treat people bad normally and that is just who they are.

I think there are some cultural differences, that's all. I don't think she is being rude, she might be a bit shy and may be unsure how to respond. Most cultures, unlike the North American, are more direct in expressing what they don't like so she would be inclined to tell you if she doesn't like a certain activity. I think you are being very nice for giving her the benefit of the doubt.

About her declining dinner on a 1st date, here's a possible (may be uncommon) reason. I myself feel uncomfortable eating in front of someone I don't know well and I might be romantically interested in. This is very unusual in my case as I am an extrovert. This is something that I haven't really told many.

If you want to score some points, read a bit on her culture and learn a few words of her native language.
