I recently started getting re-acquainted with a woman from college (it's been 10+ years since college). We've gone out twice - once for a casual dinner after work, and once for drinks after work - and each time spent about 2.5 hours together. I like this girl, but so far, our outings (I hesitate to call them "dates"), have been of a friendship-nature and I've asked her to both of them. What can I do (or what signals should I look for) to determine whether she might like to pursue a more romantic relationship?

I would ask if she's seeing anyone.

If no, I think you should state you wish to date her. Just make your desire clear, so you do not waste time only to find you never had a chance.

I think if she is asking questions of you in a personal way, which enables her to discover your goals regarding your future, that, simply combined with seeing you at all, is a sign she is interested enough.

Good luck.

D_Lion summed it up pretty well.

Question though, when you were in college did you two date or were you just classmates?

We did not date in college. In fact, we really didn't know each other, except in passing. She was 2 years ahead of me and not in my circle of friends.
