Any suggestions for keeping a mellow mid-week "order a pizza and rent a movie date" from becoming boring or non-memorable?

Hide laxative in one of the slices of pizza, then jumble all the pieces. It's like a horrifying version of Russian Roulette. I promise it won't be boring or non-memorable.

Umm, red wine? Goes great with pizza and a movie. Other than that, as long as you are not boring, your date won't be bored. Sometimes the nights in are the most memorable - you have an opportunity to really talk and connect and touch and all that good stuff, in a nice relaxed atmosphere. Just don't go into it thinking that it's gonna suck. Oh, and you best be sure the pizza's good.

It is so complicated, ya'll, and it doesn't even have to be.

Instead of ordering a pizza, have theme foods. For example, pick a letter of the alphabet and both of you have to bring foods beginning with that letter or foods that you would find at a certain event/place such as the movies. Don't tell each other what you're planning to bring before hand.
